The final addition in our collaboration with Food at Hand is this proper beauty of a dish Sweet and Sour Tofu - Speedy & completely vegan! Using SAUCD. ultra flavoursome Scotch Bonnet Ketchup which really adds the extra zing for your tastebuds!
SERVINGS COOK TIME Approx 4 Cook: 20 mins
Block of tofu cut into cubes
Half tin of pineapple
2 peppers diced
4 spring onions chopped
A small bunch coriander
2 cloves garlic
20g ginger crushed
1 tbsp soy sauce
3 tbsp SAUCD Scotch Bonnet ketchup
2 tbsp white wine vinegar
2tbsp soft brown sugar
Firstly combine your pineapple juice from the tin, garlic, ginger, soy sauce, SAUCD Scotch Bonnet ketchup, half cornflour, white wine vinegar & brown sugar in a bowl and mix up.
Heat some oil in a large pan or wok, add in your onions & peppers for around 4 minutes until softened
Whilst doing this add your tofu into a bowl and coat with the other half of cornflour, then add to the pan, season and cook for 4 more minutes
Add in your sweet & sour sauce, along with coriander, allow to really soak in and turn to the thick classic sauce.
Serve with toasted sesame seeds, spring onions & sticky rice. Enjoy!
